Ingredients
8 hot dogs
8 hot dog buns
1 small onion, chopped
1/2 cup grated cheddar cheese
Pickled jalapeno peppers, to taste
Ketchup and mustard, to taste
2 pounds ground beef
1 large onion, chopped
4 garlic cloves, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 can (28 ounces) crushed tomatoes
1 can (15 ounces) kidney beans, drained and rinsed
1 green bell pepper, chopped
Salt and pepper, to taste
Shredded cheddar cheese, for serving
Sour cream, for serving
Chopped fresh cilantro, for garnish
Preparation
Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until browned, stirring frequently to break up any clumps.
Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.
Add the chili powder, cumin, paprika, and cayenne pepper to the pot and stir to coat the beef and onion mixture.
Pour in the crushed tomatoes with their juice, kidney beans, and chopped bell pepper. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and simmer, stirring occasionally, for 30-45 minutes or until the chili has thickened and the flavors have melded together.
Season the chili with salt and pepper to taste.
To serve, ladle the chili into bowls and top with shredded cheddar cheese, a dollop of sour cream, and chopped fresh cilantro.
